  1. KITCHEN: Benefits of red tea

    Wednesday, February 12

Lovers (but not only) of tea remind that you can read two more posts about tea – green and white, so today is a time for their one – red tea. Ok, I drink it very rarely but the taste of my favourite Rooibos here is irreplaceable (till now of course). It’s the best for long winter evening and nights in front of computer screen ;) Red tea comes from China but it’s also produced in Taiwan. It’s called Pu Erh – name comes from the city Puer which is in Yunnan province – it’s commonly known as a place where tea is produced. I think that many of people see it in shops on tea boxes. There are special trees in Yunnan, called Qingmao and the have special leaves. The leaves are specially prepared – fermented and dried in special baskets. It’s a way of preparation known in China for more than 1000 years and probably it won’t change. It doesn’t have to – thanks to it, red tea has many benefits which I’ll tell you later about.

  2. Last week I was writing about benefits of green tea – today you’ll get to know a little bit about benefits of white tea. Have you ever tried it? I thinks so! Today you can find a lot of kinds in the shops. You don’t have to go to the special shop to but something valuable. You’ll find good products in supermarkets as well. My first meeting with white tea was a few years ago. By accident I saw it in the shop where usually I didn’t buy anything. Ok, but the white tea is exactly?
The answer is very simple – it’s made from young leaves and not undeveloped buds, which are collected in the early spring in China. Later leaves and buds are dried on the sun and they don’t ferment. What’s more tea bushes are protected from sun light and they don’t produce chlorophyll (green plant pigment). Leaves are not folded – they’re natural all the time. I’m talking about tea in leaves, not in bags ;) Production of white tea is very traditional and restrict – that’s the reason of its price which is from 20 to even 100 PLN per 100g. White tea brew isn’t white but light yellow. Name comes from undeveloped buds which are covered with grey hair. The taste of white tea is mild and without bitterness which is typical for green tea.

  3. Cleaning up on my blog

    Sunday, February 2

My dear readers, there is a time for me to do some summary. I’m doing my plan and don’t want to give up. Just the opposite! – changes are coming :) Better changes – I like them very, very much! Last two months were great to prepare some conclusions about writing a blog. It’s not as hard as I thought in the past. Now I know that if you’re writing about things which are interesting for you, you can have a lot of pleasure and satisfaction. Till now my blog has been divided into six parts. Each of them was connected with my interests – wider or narrower, but with topics which I wanted to write you about. Each part was made for one day of the week. I was trying to write posts six times a week. Now I know that’s too much (a little bit ;)). Anyway it was impossible from time to time. I’ve decide not to change my general idea but make some changes which won’t let you being bored and give me more time to breathe.
From the nearest week I invite you to read posts from three parts :)
    1.   Human world: you’ll find here all information connected with people. Health, sport, senses, even beauty (why not!), motivation, self-development, body, travelling and many more.
    2.   Culture and languages: this part is very near to me :) so – methods of teaching and learning languages, films and books reviews, language news, ways of spending free time and many more.
    3.   Kitchen: that’s the part which I love the most :) you’ll find here not only recipes for delicious dishes and cakes but also useful information connected with cooking, news about various cuisines and products, a piece of savoir-vivre.

Let’s read and there will be move soon …. :)

  4. Today is high time to answer the question – what the molecular gastronomy is? Have you ever heard about it? If not, I’ll try to tell you a little bit about it – anyway, it’s really interesting. I haven’t had any experience with it yet but I think it’s just a matter of time when I’ll start doing experiments in my kitchen :) This kitchen is also called creative kitchen – mainly because you need there a lot of creativity, but not only! It’s based on scientific knowledge – if you’re scared of Physics, better not try it ;) However, if you like trying new things and science is not your enemy – it’s for you! The beginning of molecular gastronomy was 26 years ago! In 1988 two scientists – Nicholas Kurti (Hungarian physician) and Herve This (French chemist) created it. So we can tell that they’re fathers of molecular gastronomy.

I can’t count how many years I’m the fan of green tea. I think it became by accident – I just wanted to try something new. Before I fell in love with green tea, I liked drinking black tea with a lot of lemon. However, it’s not so healthy. Probably, together they produce aluminum citrate which can be harmful for people. Is it really like that? I think that we should think twice about it and read some researches. For me, from time to time black tea with lemon is the best in the world :) Let’s back to green tea – what’s this and healthy?
Green tea is a brew of China tea leaves. Young leaves are collected from bushes with a high attention. It’s necessary to keep them safe. Next, they wilt and are heated – it prevents from oxidation. Then leaves are curled and dried. Making of green tea is very quick process – it takes around 8-14 hours. Green tea can be brewed in Chinese way – pour hot water, then pour it out and again pour with water in temp. 70C. leaves can be brewed a few times. Times of brewing can be different as well – 2(3) minutes and you have refreshing drink, 5(6) minutes – relaxing one. As you wish :) I usually like short brewing.

  6. KITCHEN: Meringue with fruits

    Wednesday, January 22

Since my baking adventure began I wanted to do the meringue with fruits. I was reading and reading that it’s not so easy to do it, not always is ok and so on! It took me long time to find good recipe but finally I’ve made it! What’s more – it’s delicious ;) It didn’t fall or become wet – nothing has happened. I don’t know why people write such things but maybe they can’t do it. Let’s do the meringue! My recipe comes from my favourite blog, of course (http://www.mojewypieki.com/przepis/torcik-pavlova-z-malinami). As always it was hard to do it without any modifications ;) From this recipe you can bake two meringues – smaller one and bigger.

  7. KITCHEN: Lentil soup

I feel in my bones that there are only days to white winter with snow and cold. So I’ll need a big amount of warming up. It’s possible in many ways of course ;) One of favourite (beside warm blanket!) is delicious and very warm lentil and tomato soup. Be careful with lentil amount if you want to modify the recipe. I have bad experience with something which looked like gruel, not soup ;)

  8. KITCHEN: Spanish paella

    Wednesday, January 8

Be careful – your mouth can water after reading today’s post ;) I’ve found this taste last year in Madrid and this year once again in Barcelona. I love seafood and they are here – but I didn’t know that some kinds of paella are without them!  From me it’s not acceptable – it’s not the same with chicken. Of course it’s only my opinion – prawns, prawns and many other seafood. The best are fresh but unfortunately Poland is not on the Mediterranean Sea – it’s a pity! Nevertheless we can find all products in our shops without any problems. Of course I’ve made some modifications ;) but wait a moment.

We can find nuts in many dishes – cakes, ice creams, chocolates, but also in meat meals and salads. They are rich in protein (25%), vitamin E – antioxidant, which protects from heart diseases and atherosclerosis. They contains unsaturated fats, healthier ones. From the other side they are very caloric but reasonable eating shouldn’t cause getting fat ;)
We can choose many kinds of nuts – sold by weight, in packets, in nags or boxes. It’s very important to check country where they come from. Nuts should be dry and for example walnuts are the best in husks.

  10. KITCHEN: Bananas in chocolate

    Wednesday, December 11

I love Wednesdays – it’s a day when I can show you my little kitchen miracles. Today is for a very simple dessert – simple but cute. It will great for children birthday party and will cheer up meeting with our a bit older friends as well. I’m talking about bananas in chocolate with colorful hundreds-and-thousands (sprinkles) :) Yes, yes I know that they are very unhealthy but take it easy – don’t eat them too much and not too often and nothing will happen. Don’t be mad ;) The recipe is very easy but I like to use those which are tested by other people. And this time again I used that from blog: www.makecookingeasier.pl.

  11. KITCHEN: Flour - white death?

    Wednesday, December 4

Today's post will not contain any recipe, but will be connected with one ingredient of my favourite cakes, cookies, muffins and other delicious desserts. Flour is practically required for most baking things. First I’ll say a few words about its production, then about the kinds and types that can be found in stores.
The beginning of flour was around 9,000 years BC - woow pretty good ;) then it was made from grains by using flat stones. First mill was built much later – in the 19th century. Nowadays grains are milled in a mechanic way. The endosperm of flour, which is inside, is separated from the outside one – seed layer. The endosperm is used to produce the flour and the seed layer for brans. There two types of machines which are used to produce the flour – grinding and weeding out. That’s how different quality types of flour are made. Of course, less recycled, better type
    :)

  12. KITCHEN: Cake with fruits

    Wednesday, November 27

Kitchen is my favourite part of this blog. Especially if it is connected with baking. As I said- cooking I like less. My confectionary passion has developed recently. Around 2 years ago, when we moved to a new family house, I got new, beautiful oven. Thanks to it I could develop my “confectionery wings”. I didn’t have to bake at a guess and change sides during baking. At this moment my collection counts a dozen of forms to bake. Each time I’m trying to do something different, experience new tastes and flavors. Today I want to present you my number 2 of “favorities” – however, I think it can get place number one in short time (after carrot cake) :)

  13. KITCHEN: Carrot cake

    Wednesday, November 20

This post was waiting very, very long for its time. I wanted to start my writing adventure the previous time from it. It failed then, now is success! :)
Carrot cake – the best of the best in the world! Fleshy, sweet, wet, with gingerbread smell – it’s an ideal. Although, lately I’ve found that there is something which makes carrot cake not the best but I’ll tell about it next week. I was thinking about preparing it long time – won’t be weird in taste? Too much vegetal? And so on… I decided to try. You can find so many recipes in the Internet. But I wasn’t looking for long time. The first blog which I found and voila! I’ve got the recipe which I’m faithful till today. Maybe some of you knows cooking and baking blog of Zosia Cudny – I’ve taken my inspiration from her. However, the amount of my recipients is multiplied by 1,5.
