  1. Last week I was writing about benefits of green tea – today you’ll get to know a little bit about benefits of white tea. Have you ever tried it? I thinks so! Today you can find a lot of kinds in the shops. You don’t have to go to the special shop to but something valuable. You’ll find good products in supermarkets as well. My first meeting with white tea was a few years ago. By accident I saw it in the shop where usually I didn’t buy anything. Ok, but the white tea is exactly?
    The answer is very simple – it’s made from young leaves and not undeveloped buds, which are collected in the early spring in China. Later leaves and buds are dried on the sun and they don’t ferment. What’s more tea bushes are protected from sun light and they don’t produce chlorophyll (green plant pigment). Leaves are not folded – they’re natural all the time. I’m talking about tea in leaves, not in bags ;) Production of white tea is very traditional and restrict – that’s the reason of its price which is from 20 to even 100 PLN per 100g. White tea brew isn’t white but light yellow. Name comes from undeveloped buds which are covered with grey hair. The taste of white tea is mild and without bitterness which is typical for green tea.
              How to brew white tea? It’s very important how to prepare it if we want to get benefits. Water should be soft and without mineral salt, especially magnesium and calcium. White tea can be brewed even three times – 1 teaspoon for 1 cup. The optimal temperature is from 70 to 85C. Brewing time depends on taste which we want to achieve – 5 minutes are optimal.
              There are a lot of types of white tea- the same with green one. The original is produced in China, but there are also from Taiwan, Thailand and Nepal. The most famous are:

    1.   Shoumei: grown in Fujian and Guanxi province, with stronger taste. It’s recommended to use good mineral water for brewing. Remember not to overbrew it – will be bitter.

    2.   Bai Mudan: according to experts it has deeper taste and is stronger than other white tea. There is a pinch of peony in it and the taste is sweet, without bitterness.

    3.   Baihao Yinzhen: the most expensive and the mildest, can be brewed few times. After short will be very mild, after longer – with deeper taste and darker colour.

    It’s time to get to know about benefits of white tea. There are a lot of them. In the Internet we can find many researches which results are less or more trustworthy. I’ve tried to collect them in one place :) so, white tea …

    -        stimulates and refreshes because of high caffeine level. It also supports concentration so it should be drunk by people who has headwork;

    -        supports immunity, reduces stress and tension thanks to high amount of vitamin C;

    -        reduces cholesterol, lowers blood pressure and reduces the risk of heart disease thanks to catechin ;

    -        protects our body against free radicals and slows down the aging process thanks to the richness of polyphenols. It includes them two times more than green tea. It’s often called the "elixir of youth";

    -        reduces the risk of cancer due to antioxidants;

    -        has a positive effect on the teeth and gums, it also has antifungal properties;
