  1. KITCHEN: Meringue with fruits

    Since my baking adventure began I wanted to do the meringue with fruits. I was reading and reading that it’s not so easy to do it, not always is ok and so on! It took me long time to find good recipe but finally I’ve made it! What’s more – it’s delicious ;) It didn’t fall or become wet – nothing has happened. I don’t know why people write such things but maybe they can’t do it. Let’s do the meringue! My recipe comes from my favourite blog, of course (http://www.mojewypieki.com/przepis/torcik-pavlova-z-malinami). As always it was hard to do it without any modifications ;) From this recipe you can bake two meringues – smaller one and bigger.

    Ingredientes for meringues:
    5 egg whites
    300 g of sugar
    1 teaspoon of lemon juice
    1 teaspoon of potato flour
    a pinch of salt

    Preparing:
    1.      Put baking paper on baking tray and draw two circles – 20 cm diameter and 15 cm.
    2.      Heat the oven to 180C.
    3.      Whip egg whites with salt, add sugar (not all in one moment! Spoon by spoon). Add lemon juice and potato flour, mix togehter.
    4.      Put meringues on circles.
    5.      Bake for 5 minutes in 180C, then around 80 minutes in 140C.
    6.      Meringue should be ruddy, it can fracture a bit. Cool it in open oven for few hours.

    Ingredientes for cranberry cream:
    300 ml of cold 30% cream
    half lemon peel
    1 spoon of powdered sugar
    200 g of cranberries (fresh or jam)

    Preparing:
    1.      Whip cream, add sugar at the end.
    2.      Add lemon peel and mix everything.
    3.      Half of cream and cranberries put on bigger meringue, then put smaller one on it and cover with the rest of cream and cranberries. Hold in the fridge.

    Nothing more, nothing less – just eat :) Yum!
