  1. KITCHEN: Cake with fruits

    Wednesday, November 27

Kitchen is my favourite part of this blog. Especially if it is connected with baking. As I said- cooking I like less. My confectionary passion has developed recently. Around 2 years ago, when we moved to a new family house, I got new, beautiful oven. Thanks to it I could develop my “confectionery wings”. I didn’t have to bake at a guess and change sides during baking. At this moment my collection counts a dozen of forms to bake. Each time I’m trying to do something different, experience new tastes and flavors. Today I want to present you my number 2 of “favorities” – however, I think it can get place number one in short time (after carrot cake) :)

The recipe is for summer but I think that you can use it with small modifications as well in autumn or winter. Alternatively you can use frozen fruits. The recipe comes from blog of Dorota (Moje Wypieki: http://www.mojewypieki.com/przepis/torcik-czekoladowy-z-owocami-lata). Below you can find English translation:
I haven’t used frużelina – there are fresh fruits which are in gel form
    Chocolate cake:
        3 big eggs
        150 ml of milk
        130 ml of oil
1 and 1/4 glass of brown sugar
        1 teaspoon of vanilla extract
        150 g of flour
        60 g of cocoa
        ½ teaspoon of baking soda
        1 teaspoon of baking powder
All ingredients should be in room temperature.
    1. Mix eggs, milk, oil, sugar and vanilla – in first bowl.
    2. Second bowl – mix flour, cocoa, baking soda and baking powder.
    3. Add dry ingredients into wet ones and mix them.
    4. Bake in 170ºC for 50 minutes or longer, till „dry stick”.
    5. Cool and cut “top” of the cake – crumble it. Rest part of cake cut into two pieces.
    Cream:
        250 g of mascarpone
        250 ml of cream 36%
        1 teaspoon of vanilla extract
    All igredientes should be cooled.
Mascarpone and cream mash together, at the end add sugar and vanilla.
    Preparing
One part of the cake put on the cake stand. Put half of the cream on it, cover with the second part of cake. Add cream, decorate with crumbled cake and fresh fruits.
    Keep in fridge.
As I said I didn’t use frużelina because it’s very labor-intensive. I hope to use it next time. Blog of Dorota is full of beautiful pictures- as you can see mine is not so nice but it doesn’t reduce the taste of cake.
If I have to describe the taste of cake, I’ll use word “unearthly” – it melts in mouth and cream with fruits makes you to eat it more and more. A piece of advice for gourmands – bake in a big form with greater amount of ingredients. Cake disappear very fast :)
I like many things in confectionery – the most that I can please my family and close friends. Secondly, there are a lot of decorations which you can use for muffins and cakes. Admittedly it’s a black magic for me now but I hope to develop my skills.
